Raspberry White Chocolate Scones

I often make the morning scone mix as is, because they are just that good. I make myself a coffee or tea and then dig in to those scones with some raspberry jam! It transports me to rainy days, when I lived Cork, Ireland and ate waaaay too many scones at Duke's Coffee shop, where I worked.

When I'm feeling deluxe, I make RASPBERRY WHITE CHOCOLATE SCONES. These little numbers will have your fam and friends thinking you went to your local bakery or cafe. Honest.

Okay okay, how to make them..

Follow the Braydough Morning Scone Mix directions, then fold in raspberries as the final ingredient. Knead until all of the flour is combined, and the dough holds together in a large ball.

Transfer to your prepared sheet pan, shape the dough into a flat, round disc. This is where I add an unhealthy amount of white chocolate chips on the top of my dough. * (I push them down into the dough, so they don't easily fall when I'm eating them).

I then cut the dough into 8 wedges and spread them out so they have room to grow!

And that's it. Voila. You have bakery like scones in your kitchen. Time to scarf them down.

* some folks might want to add white chocolate chips in the mix, like the raspberries. I say, go for it! I just like how the white chocolate gets all melty melty on the outside

Blueberry Season Pancakes

Find yourself a solid blueberry patch, and start picking! You are going to want to eat these fresh blueberries with Braydough Buttermilk Pancake & Waffle Mix.

Whether you add them to the batter, or sprinkle them on top of your stack of pancakes. This friendship between pancake mix and blueberries are going to motivate you to head outdoors and fill your containers... or get your kids to ;)

Northern Chemex

Northern is the bag I reach for first thing in the morning. As a coffee professional, I love real acidic coffee but not first thing in the morning.

That's why Northern is perfect.

It's a full bodied cup with notes of chocolate and hazelnut. It's a crowd pleaser. It's a coffee that caters to the black coffee drinkers AND double double's of the world.

I like this one on chemex. A few tips to get the very best out of this coffee...

-wet the paper filter before use, to get rid of that residual paper flavour they all seem to leave.

-pre-heat your chemex. There is nothing worse than making a coffee, and having the cold glass of the chemex draw all of the heat from your brew, leaving you with a room temp coffee.

-grind your coffee on demand, to the size of course kosher salt

-weigh your coffee! start with a 1:16 ratio(for every gram of coffee, you add 16 grams of water), you can make it stronger or weaker from there.
